The Rotel Dip, also known as “cowboy dip” or “ugly dip”, is a unique party dip made with three main ingredients – cheese, ground beef and tomatoes. Rotel is the brand name of a classic canned tomato made with green chillies, making it one of the key ingredients in this recipe.
The Rotel Dip is a simple, easy-to-make comforting food, so it is a crowd-pleaser. It also goes well with many other side dishes such as tortilla chips, french fries, crispy chicken wings, birria tacos, blooming onion, nachos, shrimp scampi, ranch crackers, grilled corn on the cob, sweet potato fries, coleslaw, vegetable sticks, fried pickles and mini quesadillas.

Rotel Dip ingredients

- Ground beef: Lean ground beef is preferable since you will drain the fat in this recipe. Alternatively, you can try using pork if you prefer the flavour.
- Tomatoes: A can of Rotel tomatoes contains enough tomatoes and green chiles you need for a balanced dip. If you do not have Rotel tomatoes, you can use small diced tomatoes.
- Cheese: Velvetta cheese is the most common cheese for this recipe because it melts very easily for a dip. Make sure you use the yellow one to ensure the final dip colour is yellow. Alternatively, you can use cheddar cheese, mozzarella, Monterey Jack or any type of cheese you have available.
- Chilli pepper: If you are looking for a kick in your dip, add chilli pepper or any spice of your choice.
- Salt: To enhance flavour. However, you do not need salt if your side dish already contains some salt.
- Toppings such as fresh chopped cilantro, green onions, and diced tomatoes.
- Tortilla chips or any side dish of your choice.
How to make Rotel Dip
Ingredients
- 1 lb. ground beef or pork sausage
- 1 can Rotel tomatoes
- 1 package Velveeta cheese, cubed
- 1/2 tsp. chilli powder (optional)
- Chopped fresh cilantro, tortilla chips or any side dish, for serving.
Direction
- Cool the beef, stirring frequently for five minutes or until browned. Drain away the fat.
- Reduce the heat to medium. Then add tomatoes and cheese. Cook, stirring frequently for five minutes or until the cheese is melted.
- Remove from heat and add the chilli powder if you like.
- Serve in a serving bowl and add the cilantro as topping. You can also serve it with chips or any side dish of your choice.
