  1. Two cups of long-grain white rice
  2. Two large green peppers
  3. One small cabbage
  4. One large onion
  5. Half cup green beans
  6. Four large carrots
  7. Two cups chicken stock

Notes on how to make Nigerian fried rice

  • It is fine to add a dash of cayenne pepper if you like some heat.
  • Try not to over-boil your rice before frying it, unless you want to end up with a bowl of soggy fried rice.
  • Don’t overcook your veggies because fried rice is best enjoyed when the Veggies remain crunchy.
  • Use mixed veggies comprising carrots, sweet peas, sweet corn, and green beans. You can also add sweet bell peppers.

Recipe Ingredients:

  • Cooked rice
  • Chopped vegetables
  • Meat
  • Soy sauce

Nigerian fried rice recipe:

  • Wash and spice the chicken pieces. Boil until tender, then fry or grill them.
  • Chop the carrot, cabbage, green pepper, and green beans.
  • Parboil the rice, then cook in the chicken stock (add two extra cups of water). Cook until almost tender, then set aside.
  • Put a clean frying pan on fire. Add groundnut oil and onion to it. Stir for a minute then add the carrot and green beans. Stir for another minute.
  • Add the cabbage, green pepper, white pepper, curry, seasoning, and salt to taste (ensure to keep it spicy). Stir-fry for 2 minutes.
  • Add the rice to the mix, stir and simmer for 5 minutes. Serve with the chicken.

Vegetable Fried Rice Recipe:

  • Add the parboiled rice to the stock and cook until the water is dry.
  • Preheat the oil in a pan, throw in the onions and fry for a minute or two, add the scallions, mixed vegetables, thyme, curry powder, salt, and stock cube.
  • Throw in the beef liver and rice. Stir-fry for about 3 to 5 Minutes. Take it off the heat and serve.
