There are two ways to make plantain and egg frittata. You can either bake them in the oven or cook them slowly over the stove. It’s super easy.

Ingredients

  • Six eggs
  • salt to taste
  • 1/4 tsp paprika
  • 1/4 tsp black pepper
  • Two ripe plantains
  • 1/4 cup vegetable or olive Oil
  • 1/4 cup green bell peppers
  • 1/4 cup red bell peppers
  • 1/2 cup red onion
  • Two fresh tomatoes
  • 1/2 tsp cayenne pepper
  • One tsp seasoning powder

Note: Feel free to add other meats of your choice, like beef, chicken, hotdogs, sausages, etc, during preparation. For a healthier meal, you can bake the plantain first instead of frying it. I prefer frying mine because it’s juicier that way.

Recipe Ingredients:

  • Two ripe plantains
  • Three eggs
  • One big fresh tomato. You can use 2 or 3 smaller tomatoes.
  • One Fresh or dry pepper to taste
  • A small onion bulb
  • Seasoning (optional)
  • Salt to taste
  • Vegetable oil for frying
  • You can also add other vegetables of your choice, such as green peas, carrots, and green peppers

Recipe Instructions:

How to prepare plantain and egg:

  • Wash the plantains to remove all dirt from the skin. Then peel off the skin and slice the plantains into desired sizes.
  • Wash the tomato, fresh pepper, onion, and other vegetables you will use for the recipe. Slice them into a plate and set them aside.
  • Heat the vegetable oil in a frying pan.
  • Sprinkle a little salt in the sliced plantain and toss for them to mix thoroughly.
  • Pour them into the heated vegetable oil and allow to fry until they turn golden brown in colour.
  • Remove the plantains and add them into a sieve for the extra oil to drain off.
  • Reduce the quantity of oil in the frying pan.
  • If it’s cooled down, reheat it. If not, add a little salt and all the sliced vegetables to fry for a minute.
  • Wash and whisk the eggs into a plate and add to the frying vegetables. Stir until they’re thoroughly mixed.
  • Allow to fry for 2 minutes. If the salt is not enough, you can add one seasoning cube or a little salt to taste. I don’t like adding seasoning cubes to my sauce. Salt is enough. At this point, you can also add curry if you like.
  • Stir and put down from the heat. Serve on a plate with any beverage or cereal of your choice, and enjoy.

  • Pour them into the heated vegetable oil and allow to fry until they turn golden brown in colour.

  • In a skillet, preheat two tablespoons of cooking oil.
  • Sauté or fry onions for about 2 minutes, add bell peppers, and stir fry for another minute.
  • Add in the cayenne pepper, salt, paprika, and seasoning powder. Stir and leave to fry for about 2 minutes.
  • Whisk together the eggs, salt, and paprika in a large bowl. Add some of the fried vegetables and mix them.
  • Pour mixture into a greased baking pan. Then add the fried plantains over the mixture plus the remaining vegetable mixture.
  • Preheat the oven in 350F and bake the mixture for about 30 minutes.
